Tomato and Spinach Angel Hair Pasta
2 tablespoons extra virgin olive oil
5 red tomatoes
1 tablespoon minced garlic
1/4 teaspoon salt
pinch red pepper flakes
2 tablespoons Earth Balance Butter (Vegan)
1 container fresh spinach
1/2 cup toasted pine nuts
1/4 cup freshly grated Parmesan cheese
1/2 box Angel hair pasta
- Preheat the oven to 400 degrees
- Dice all tomatoes
- Place butter in a sauté pan and sauté entire package of spinach (It seems like a lot, but it won't be much after you sauté it)
- Place olive oil, tomatoes, garlic, salt, spinach, pine nuts and red pepper flakes in a large oven-safe pot. Roast for 35 minutes.
- Cook angel hair pasta according to package directions. Drain.
Serve Tomato mixture over the angel hair pasta and top with Parmesan Cheese (Either regular or Vegan Parmesan)
This recipe serves about 4. This fed me, my husband, Zachary and had some leftover for my lunch the next day!
